What Michigan requires
Michigan's Food Law (Act 92 of 2000, MCL 289.2129) requires food service establishments to employ at least one managerial employee as a food safety manager, certified under a personnel certification program accredited by the American National Standards Institute using Conference for Food Protection standards. The ServSafe® Food Protection Manager Certification meets that standard and is accepted by Michigan health departments.
The exemption is narrow: low-risk establishments serving only pre-packaged or non-potentially-hazardous food, and licensed temporary establishments. If you run a kitchen in Ann Arbor, you need a certified manager.
